Sabudana vada is a Maharashtrian snack consisting of Sago, Potatoes, Peanuts, and other species. Sabudana vada is a snack that can be used as a tea-time snack or a fasting snack. Sabudana is also known as tapioca pearls or sago. Sabudana contains a high amount of carbohydrates, making it a high-energy booster. Since Sabudana is made of starch it has high calories. Sabudana is not very nutritious but is carb dense. It is a great source of carbs and provides you with instant energy so people usually eat it while fasting.
Sabudana can also help gain weight and is particularly good for those who are underweight. It is also a good source of calcium and magnesium which can help you make your bones stronger. As Sabudana is rich in carbs and low in other nutrients, you must use peanuts to make the dish more nutritious. Sabudana vada can be served with yogurt, green chutney, or tea.

Ingredients :
- 1½ cup Sabudana (soaked for about 6 to 8 hours)
- 3 medium-sized boiled Potatoes
- ½ cup Peanuts (roasted and ground)
- 2 to 3 green Chillies (crushed or paste)
- 1 inch of Ginger (crushed or paste)
- Salt as per taste
- 2 tablespoons of chopped Coriander (Cilantro) leaves
- Oil for frying
- 2 tablespoons of Lemon juice
- 1 tsp Sugar
How to make Sabudana Vada?

Sabudana Vada recipe step by step:
- Wash Sabudana with Water properly and soak for at least 6 to 8 hours in 1½ cup of water. Drain the water and let it dry for about 30 minutes.
- Boil potatoes, peel, and mash them after cooling the potatoes.
- Roast the peanuts and grind them to make a coarse powder.
- In a mixing bowl take the soaked Sabudana, Potatoes, Peanut powder, Green chili paste, Ginger paste, Salt, Sugar, and Lemon juice.
- Mix everything well.
- Add finely chopped Coriander leaves to it and mix it well.
- Make small lemon-sized balls and flatten them with your palms.
- Heat the oil in a kadhai. Check the temperature and on medium heat fry all the vadas in hot oil till they become golden brown. Flip the vada and fry them until they become golden brown on both sides.
- Remove the vada from the heat and put them on a paper towel to absorb the extra oil.
- Serve the hot Sabudana vada with yogurt or green chutney.
