Ingredients:
- 2 cups chopped Lauki
- ½ cup soaked chana dal
- 1½ tablespoons oil
- 1 medium-sized Onion (optional)
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 medium-sized Tomato
- ½ tsp of Asafoetida (Hing)
- 1½ tsp red chili powder
- 1 tsp coriander powder
- ¼ tsp turmeric powder
- 1 tsp cumin powder
- Salt as per taste
- 3 to 4 cloves of garlic ground into a paste (optional)
- 1 cup water
- Coriander/Cilantro leaves for garnishing

Dudhi chana dal step-by-step recipe:
- Wash and soak chana dal for 30 minutes before cooking. Once soaked, drain the chana dal and keep it aside.
- Peel and cut the Lauki into small pieces.
- Heat 1½ tablespoon Oil in a pressure cooker on medium flame. Add Mustard seeds. When Mustard seeds begin to crackle add the cumin seeds in it and let them sizzle.
- Add Hing and then add the finely chopped onion in it.
- Saute for 2 to 3 minutes and when the Onion turns soft and pink, add in the Garlic paste and chopped Tomatoes.
- Saute for 2 to 3 minutes and add red chili powder, cumin powder, coriander powder, turmeric powder, and salt as per taste. Saute for 3 to 4 minutes or until the masala is cooked.
- Then add the soaked chana dal in it and mix it with masala and cook for 2 to 3 minutes.
- Add the chopped Lauki to the masala and mix it well.
- Lastly, add water to the masala, mix well, and close the lid of the pressure cooker. Cook until 4 to 5 whistles on a high flame.
- When the pressure is released, open the lid and stir it. Garnish with Coriander leaves and serve with roti.
