Ragda patties are a famous street food of Gujarat and Maharashtra. It is a combination of two types of recipes like ragda and petties, served with different types of chutneys. Ragda is made with white peas and spices with not too much flavor and patties are made with potatoes and served it together with green chutney, tangy and sweet chutney, garlic chutney, tomatoes, onions, coriander leaves,sev(Indian noodles), and fried peanuts on top of it.
In North India, you can easily find chhole Tikki as street food but in the western part of India, we are used to Ragda patties. Ohh my god my mouth is watering now, so let’s start with the recipe for Ragda patties. It is a very simple and easy recipe to make and a mouth-watering recipe for taste.

Ingredients:
Ragda:
- 1 cup dried white peas ( soak in water before 6 to 8 hours)
- 2 tablespoon oil
- 1 medium onion
- 1 medium tomato
- ½ inch ginger ( make it paste)
- 3 green chili paste ( make it paste)
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder
- ⅓ teaspoon mustard seeds
- Pinch of asafoetida ( hing)
- ½ teaspoon garam masala
- Salt as per taste
Petties :
- 4 to 5 boil potatoes
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon amchur powder (dry mango powder)
- Salt
- ½ teaspoon garam masala
- 2 tablespoon coriander leaves
- 2 tablespoon oil
- ½ teaspoon cumin powder
Serve:
- ¼ cup green chutney
- ½ cup tamarind chutney
- 2 teaspoon red garlic chutney
- ¼ cup onion (finely chopped)
- ¼ cup tomato ( finely chopped)
- 2 tablespoon nylon sev
- 1 tablespoon fried peanuts
- 2 tablespoon coriander leaves
- 1 teaspoon chat masala
How to make Ragda Patties?
Ragda Recipe Step-by-Step :
- Wash and soak white peas for at least 7 to 8 hours with enough water.
- Drain the peas and discard the water. Then put the soaked white peas in a pressure cooker, add 3 cups of water and ½ tablespoon salt, ⅓ tablespoon turmeric powder in it, and pressure cook it for 4 to 5 whistles, until the peas become soft. After cooling down the pressure cooker, open the lid.
- Now heat the oil in a pot and add mustard seeds to it.
- When mustard seeds start to pop add curry leaves and a pinch of asafoetida( hing) in it.
- Then add finely chopped 1 medium size onion in it and sauté for 3 to 4 minutes.
- After onions turn pink add finely chopped tomato in it and cook it for 3 to 4 minutes. Then add all the spices like ginger and green chili paste, a little amount of garam masala, chilly powder, turmeric powder, and salt in it, and sauté for 2 minutes.
- Then add cooked white peas to it, mix it well, and cook it for 5 to 7 minutes with all the spices. After 7 minutes switch off the flame and keep it aside.
Patties Recipe Step-by-Step :
- Boil 4 medium size potatoes and peel them.
- Take potatoes in a mixing bowl and mash them properly and add turmeric powder, red chili powder, amchur( dry mango) powder, garam masala, salt, and cumin powder in it.
- Mix all the ingredients properly and add washed and finely chopped coriander leaves in it.
- Mix it well and knead it like a soft dough. Then divide it into a big Lemon size ball and flatten it between the palms of both hands. Make all the patties the same way.
- Heat 1 tablespoon of oil on a tawa or griddle and place the patties on it and let them cook until they become golden brown on one side.
- Flip it on the other side and add 1 tablespoon of oil and let them cook on the other side.
- Turn off the flame and serve it.
Instructions :
Ragda:

- Pressure cook it for 5 whistles until the peas become soft.
- Let it cool down and when pressure is released completely open the lid.
- Now heat oil in a pot and add mustard seeds to it.
- When mustard seeds start to pop, add curry leaves and a pinch of asafoetida in it.
- Then add finely chopped onion and sauté it until the onion turns pink and translucent.
- Add tomato to it, mix it well, and cook it for 3 minutes.
- Then add all the spices like salt, turmeric powder, ginger chili paste, red chili powder, and garam masala in it.
- Mix it well and saute it for 1 minute.
- Then add cooked white peas into it and mix well and cook it for 5 to 7 minutes.
- Switch off the flame and keep it aside.
Patties:
- Boil 4 to 5 potatoes and peel them.
- Take potatoes into a mixing bowl and mash them properly.
- Add turmeric powder, red chili powder, amchur powder,garam masala, cumin powder, and salt.
- Mix all the ingredients properly then add coriander leaves in it and mix well.
- Knead this mixture in a soft dough. Then divide into big lemon size balls and flatten them between the palms of both hands, making all the petties the same way.
- Heat 1 tablespoon of oil on a griddle or Tawa and place the patties on it. Let them cook until they become golden brown on one side.
- Flip it on the other side, add oil and let them cook until golden brown.
- Turn off the flame and now it is ready for serve.
Serving :
- For serving the ragda patties place 3 patties on a serving plate. Pour ragda evenly over it.
- Drizzle sweet chutney, 1 teaspoon of green chutney, and ½ teaspoon of garlic chutney on ragda.
- Sprinkle finely chopped onion, tomato, fried peanuts, and coriander leaves on top of it.
- And at last sprinkle nylon sev on it and serve coriander leaves and chat masala on it.
